When you picture the perfect espresso, chances are you’re picturing a pretty layer crema on top. But does its presence mean you’ve pulled a great shot? Well, yes and no.

Our roasters carefully observe each coffee from the day it is roasted. Over weeks of tasting and tracking, they arrive at a moment when flavour peaks. And for a few standout lots, we get to lock that moment in time, and share it with you. At Blue Tokai Origins, our rarest coffees, frozen at peak flavour, are preserved in a temperature-controlled space we call The Coffee Cellar. This one’s close to our heart. Although we have promoted numerous housekeeping team members to the role of barista, the trainings were usually done individually by cafe but today was our first formal, structured group training for housekeeping members who are now going on to brew behind the bar. Watching them take this next step collectively was a big moment of pride for us. 💙
